Tortellini with Oven-Dried Tomatoes and Eggplant Croutons
Put tomatoes on parchment and bake at 200 degrees for 4 hours
If anyone would like the recipe, I will type it up and pass it along, but be forewarned, it is a time-consuming recipe. I don't mind, it gives me a break from typing these medical depositions!
