Travel Bug is Biting

Been thinking about going to Iceland lately (or anywhere!) maybe because the word ice sounds nice right now with 100 degree weather. Then last night, after being packed for seven years, I came across the two bowls I bought on my trip to Morocco. I believe this is an omen!

SO MANY TOMATOES . . .

Tortellini with Oven-Dried Tomatoes and Eggplant Croutons
Put tomatoes on parchment and bake at 200 degrees for 4 hours
If anyone would like the recipe, I will type it up and pass it along, but be forewarned, it is a time-consuming recipe. I don't mind, it gives me a break from typing these medical depositions!
